Ciabatta - Italian Bread mix Italian bread in the traditional style-with sour dough and a dough that absorbs a lot of water. The crumb is open pored and elastic, the crust thin and crispy. Perfect for the cheese table, as sandwich bread-or as accompaniment to soup or hot meals, the Italian way. The mother dough can be used in many different combinations.

  • 1 Batch
  • 3.000 g Italian Bread mix
  • 2.000 g Water
  • 20 g Yeast

Procedure

  • Dough temper. 23 C
  • Mixing time: Spiral 2 min slow - 6 min fast High speed 3 min. Conventional 12 min middle speed
  • Resting time: minimum 60 min.
  • Proof time: approx 30 - 45 min (dry proof)
  • Baking time: approx. 30 min at 225 C ˝ steam at insertion into oven.

French Baguette mix The perfect mix for that real French taste. Light wheat flour gives you a fluffy crumb and a wonderfully crisp crust. Use it for breakfast with cheese or jam. Make delicious sandwiches for lunch or serve it with soup and other hot dishes at night.

Soft Rolls mix The Soft Roll mix is especially developed to give the baker an easy way to a large variety of soft bread products. Makes great finger rolls or sandwich rolls-or may be touched up with a decorative icing or sweet filling.

Sunflower Bread mix Sunflower seeds add a nutty taste to this light and delicious wheat bread. Goes with any meal, as a slightly different alternative to ordinary wheat bread.

Oat Bran Mix

At the same time very light and very satisfying. Its high content of oat bran is in line with modern nutritional advice-good for the teeth and good for the stomach. The basic ingredients can be mixed to produce a number of very different breads

Gluten free white flour Alternative with milk A mix of flour for persons, who cannot tolerate gluten. To be used in the same way as plain wheat flour when preparing gluten free breads, cakes, sauces and thickenings.

Walnut Bread mix Very popular specialty tasty and wholesome bread with distinctive nutty flavor due to the many small pieces of walnut. Depending on the way you proceed, you can make several different bread types from the same bread mix. May be used for any meal of the day.
